Farm-to-table restaurant in Northern Virginia offers fresh in-season food from popular farms in the region.
Winchester, VA – Region’s 117, Northern Virginia’s hottest farm-to-table restaurant, has unveiled a new spring and summer menu featuring such items as chipotle lime skirt steak and country-style green tomatoes.
“When you start with farm-fresh ingredients, your menu has to change with the seasons by necessity,” said Bilstad. “It’s also a great way to keep your staff engaged and involved, since things are always changing.”
Executive Chef Scott Bilstad said the new menu items are based on fresh ingredients available seasonally from local farms, with the aim of providing fresh twists on classic comfort food dishes and nods to the traditions of the surrounding Shenandoah Valley.
The new seasonal menu includes such items as a Reuben sandwich with Wagyu beef corned in- house, a husky chicken verde with Byrd Mill yellow grits and mussels in white wine sauce. Other new additions include lemon ricotta agnolotti.
Along with the food, the scenery has also been changing with the seasons at Region’s 117, which is situated on the picturesque 117-acre Lake Frederick in the heart of the Shenandoah Valley. The restaurant, which is surrounded by hiking and biking trails, was named one of the 100 most scenic in America by Open Table in 2017.
