Rosslyn’s Bistro 360 Hosts Renowned Sommelier Cabestrero for April Wine Dinner

Bistro 360’s monthly wine dinners continue to amaze and delight. This month’s wine dinner is five courses of Spanish wine and cuisine paired perfectly and features renowned Sommelier Aurelio Cabestrero who will introduce each course. Cabestrero will guide you through the tasting experience while giving insight to the wine’s history, maker, terroir, and more. 

Cabestrero was named one of Robert Parker’s “Wine Personalities of the Year,” stating that “Aurelio Cabestrero is a serious importer of high quality Spanish wine who will gain ever increasing recognition as his name becomes better known… there is no question he has a brilliant palate as well as a knack for finding tiny, unheralded estates that are producing high quality wine.” He has also won the Ruinart 1993 prize as the Best Sommelier in Spain, Best young Sommelier in 1994 by Wine and Gastronomic Magazine and came in second place at the National Sopexa Competition of French Wines and Spirits 1994. He is also founding member of Madrid Association of Sommeliers and Founder & President of his import company, Grapes of Spain.

Cabestrero hand-selects every wine in his portfolio to ensure they reflect the true personality, quality, and character of each vineyard, grape, and people who make it. His goal is to look for gems regardless of Denominacion de Origin as he knows there are equally exciting wines from Alicante, Pla de Bages and Almansa as from Rioja, Ribera del Duero, or Toro. Many wines in his portfolio are from young and talented winemakers who represent the new face in Spanish winemaking but have inherited old vineyards. Their new point of view stems from travelling internationally and broad exposure to the world of wine but still produce authentic expressions of Spanish wine. 

Join us for this Spanish Wine Dinner and meet Cabestrero on April 26, 2017 for five courses paired with his hand-selected wines, each of which has been rated at 90+ points. 1st Course: Salad of grilled leeks, chickpeas, medjool dates toasted pine nuts and a honey vinaigrette paired with Maria Sanova Brut de Brut Sparking Cava. 2nd Course: Serrano ham and Manchego cheese on a grilled saffron flatbread paired with Gran Vinum Esencia Divina Albarino 2015. 3rd Course: Pan seared sea scallops butter-poached potatoes and oven roasted artichokes paired with Vina Otano Barrel Fermented Rioja 2014. 4th Course: Oven roasted pork tenderloin with a wild mushroom blue cheese and caramelized onion sauce paired with Legado del Moncayo Old Vines Garnacha 2015. 5th Course: Caramelized pear tart paired with Vega Escal Priorat 2011.
