A new restaurant promising “elevated American coastal cuisine” opens next week at the Westin hotel in Crystal City.
Stillwater & Stone, a new “land and sea”-inspired restaurant and bar, will hold its soft opening starting Tuesday, June 16, on the ground floor of the recently renovated Westin hotel at 1800 Richmond Highway. It’ll be open for breakfast, lunch, dinner and cocktails, offering a variety of meat and seafood entrees.
Featured dishes include a pan-seared Norwegian salmon with herbed ancient grains, charred broccolini, lemon oil and balsamic glaze, as well as a roasted jidori chicken breast, wrapped in bacon and stuffed with spinach artichoke stuffing.
Other items include wagyu sliders, grilled marinated jumbo prawns and steak frites with chimichurri and seasoned fries, joined by the bar’s take on classic cocktails like palomas and margaritas.
For breakfast, the restaurant will serve a selection of pastries, breakfast sandwiches and egg dishes, along with Commonwealth Joe coffee, available throughout the day.
The eatery can accommodate about 130 guests and is “designed to serve as a gathering place for both the surrounding community and visitors alike,” general manager Vikas Lalwani said in a press release.
“We wanted to create an experience that feels vibrant, approachable, and elevated, where guests can connect over exceptional food, cocktails, and hospitality,” Lalwani said.
The Westin celebrated the end of a major renovation project last month, which included revamping 223 guest rooms, refreshing common spaces and installing new lights, fixtures and furnishings.
Stillwater & Stone will hold a grand opening later this summer, on an as-yet-undecided date.
